Best Paleo Breakfast Recipes

If you are starting the Paleolithic diet (Paleo for short), you might be wondering what you can eat for breakfast. After all, a person can only eat so much eggs and bacon, right? Well, luckily there are numerous blogs and Paleo cook books out there with recipes suitable for the Paleo diet. Whether you're looking for new ways to enjoy the foods you already eat or looking for a healthy way to satisfy a particular craving, we have collected a few free Paleo diet recipes to help you along.

Eggs are a surprisingly versatile food. Not only can you eat plain eggs several different ways — hard- boiled, sunny side up, scrambled, etc. — you can also stuff them with veggies for an omelet or make a frittata, my personal favorite. If you are not familiar with frittatas, they are a quick, easy, and delicious way to use up anything in your refrigerator. The following frittata recipe is one of my favorite Paleo breakfast recipes, and perhaps one of the best Paleo recipes I know for any time of day:

Bacon and Brussel Sprout Frittata

Brussel sprouts and bacon make a great combination. Both low carb and the bacon gives the right saltiness to the vegetables.

Your Paleo Ingredients:

  • 4 to 8 eggs, depending on how many people you're serving or how hungry you are!
  • chopped Brussels sprouts
  • bacon
  • diced onion
  • salt, pepper, any spices you like
  • butter

Instructions:

  • Heat up your butter in a skillet and add the bacon. Once the bacon is crispy, remove from the skillet.
  • Preheat your oven to 400 degrees Fahrenheit (about 200 degrees Celsius)
  • Add the diced onion and chopped Brussels sprouts into the hot skillet.
  • Season the vegetables with salt, pepper, and any spices you like.
  • While the vegetables are cooking, beat your eggs.
  • Once the vegetables are soft, put the bacon back in the pan.
  • Make sure the ingredients in the pan and spread evenly among the skillet, and pour in the eggs evenly.
  • At this point, don't touch the frittata! Wait patiently until the eggs are starting to cook and aren't too wobbly when you move the pan.
  • Now you can put the frittata in the oven. Bake 15 minutes or so. The frittata is done when the eggs are firm and the top slightly browned.
  • Cut and serve! Enjoy your delicious and Paleo breakfast!

Paleo Blueberry Muffins

Now, if you are really sick of bacon and eggs like I already mentioned, why not try some Paleo baked goods? Yes, you heard me correctly! This particular recipe is not from a Paleo recipe book, but rather the Paleo recipe blog paleOMG. The blogger admits she is not a stickler for the rules, but for a special breakfast, why not? Everything in moderation!

Paleo breakfast recipe from paleOMG.

Ingredients:

  • 1 cup almond butter
  • 1 cup almond meal/almond flour
  • 3 eggs, whisked
  • 1/2 cup Raw Honey
  • 1/3 cup Unsweetended Shredded Coconut
  • 1/3 cup Gold Label Virgin Coconut Oil, melted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • pinch of cinnamon
  • 1/2 cup fresh blueberries

Instructions:

  1. Preheat your oven to 350 degrees.
  2. Mix all ingredients together in a bowl. If you're good at baking, you'll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine.
  3. Place ingredients into 8-10 silicone muffin cups in a muffin tin. Or you can use muffin tin paper liners.
  4. Bake for 15-20 minutes.
