We can and do desalinate salt water to turn it into drinking water, but until quite recently (about the last 10-15 years) it was prohibitively expensive to do on a commercial scale except for situations such as naval ships. It will probably become more commercially viable in the future as more and more freshwater resources dry up, but still mainly in coastal areas, due to the high cost of transporting water.
The earth is a closed eco-system. We have a finite amount of water. Distillation is good means of getting water that is not otherwise available, but is not a solution to our longer term needs.
Well, in most cases it's a high cost endeavor considering all of the corrosion from the salt deposits upon the machinery,etc used to create fresh drinkable water. And I suppose the most significant issue with water depletion is that the majority of H20 on earth is salt water, leaving sparse water to drink.
