Do I ever Place in pan, fat side up. Sprinkle generously with Adobo with pepper, by Goya (red cap)...a good thick coating. Sprinkle with garlic powder..at least 3 - 4 tablespoons.

Not knowing how much fat your store left on it, cut the excess fat off, you will want some to keep your meat from drying out, but to much is not only not healthy for you, but will also ruin the flavor of your meat.
BBQ Pork Sandwiches After removing excess fat I place the pork in a baking pan and place one sliced onion on it then cover it with my favorite BBQ sauce. Cover pan and bake at 325 for 2 hours. After baking I use a spatula and tear the meat up for sandwiches.

Most stores will slice the porkloin for you free of charge....or at least where I shop they do. If not you can slice your pork in about 11/2 in slices. I mix up about 2 cups bread crumbs, salt, pepper, 1/4 teaspoon sage, 1/2 onion diced and 1/2 stick celery diced.
I dip the pork in a mixture of 1 egg and 1/4 cup milk then cover it with the bread crumbs and bake at 325 for 1 hour..check for doneness. You can also just slice your pork loin and fry on top of the stove but I think it is more tender when it is baked. Another thing you can do is take your pork slices and marinate them in the many marinates that are available and grill them.
I have a countertop grill and it takes about 7 minutes I think. Outside on the grill I grill them on each side till they are about 1/2 done then I place them in a covered pan and finish baking them in the oven at 325 until they are done, This gives them the grill flavor without drying them out. I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
