Yes, you can have your iPad engraved, but not at one of the shops you mentioned. The reason is, that the back of the iPad is a thin aluminum layer and not that thick. Normal engraving would ruin the back completely, so that's out of the question.

However, it is very possible to use laser engraving, and several online shops offer that, and maybe even some brick-and-mortar shops might have the equipment to do this. One store that has announced they will offer laser engraving is "Adafruit Industries". They also etch MacBook, Kindle and other devices.
