Eating apples are generally softer than cooking ones, so I am sure you can but you may end up with a pile of mush.
You can certainly cook an eating apple. Long cooking will cause certain eating apples to become mushy or fall apart, but for your method of cooking you can use any apple you like. Some of my favorite eating apples for cooking in pies or baking in the oven are Fuji and Gala apples.
Red delicious apples do have tendency to fall apart and can be mealy.
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
