I would not. Brie is meant to be warmed before serving - it is a spread. If you take the rind off, when you warm it the cheese is going to melt and run all over the plate, and then get hard.
Brie is to be spread on crackers, or small pieces of bread, etc. You do not cut it into pieces and eat it like you would most cheeses.

Brie is so good. Really - a rich buttery taste. Soften the whole thing - rind and all in the microwave - not melt, but soften, and spread it on some crackers.

The white brie rind is actually mold formed from penicillium candidum or penicillium camemberti, so if you are allergic to mold, it's best to remove the rind from the cheese. To many people the rind is the best part, I like it. If you prefer not to eat it, take a knife, run it under VERY hot water, and it will slice through the cheese like butter, but beware at room temp the cheese is going to turn into a gooey glob, YUM! I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
