Because substances react together in ratios determined by moles, not mass. An example: 6 g of oxygen and 5 g of hydrogen react to form water. Since hydrogen is the lesser mass, shouldn't it be the limiting reagent?

No. 2H2 + O2 ---> 2H2O Two moles of H2 are necessary to react with one mole of oxygen. So, instead of looking at the 6 g and the 5 g, look at the moles.

Oxygen ---> 5/32 = 0.15625 mol hydrogen ---> 5/4 = 1.25 mol Since only 0.3125 mol of H2 are required to react with 0.15625 mol of O2, the oxygen runs out way before the hydrogen does. By the way, you can do limiting reagent problems with masses, but it's a bit more involved than with moles. Moles is used because it's simpler.
