You might want to read up a bit more on evolution. It's *possible* to believe that everything else evolved, but humans didn't. It's also possible to believe that gravity applies to everything except you.
It would be equally well-supported. Biologically speaking, humans are animals. We are, more specifically, primates.
We are, even more specifically, apes. We're just apes that are bipedal and able to discuss whether or not we are actually apes. The evidence that we are descended from a common ancestor with chimps (and/or bonobos, and/or gorillas, I think the jury's still out on exactly which group branched off of our line when) is pretty strong.
Fossil evidence, genetic evidence, homologous structures, embryology, even some behavioral stuff, I believe.
The theory that humans evolved from ancestral apes is a theory- it isn't conclusively true, although there is a lot of evidence to support it. This means that in a few years this theory may be disproved by a more viable alternative (e.g. lots of evidence may be found to support your idea that humans are evolved from ancient pigs or something, that outweighs the 'ape' theory). So to answer your question in the short, yes you can beleive it!
If you honestly think that's true don't be afraid to believe in your opinion. As for your Lucy question, it's thought that she was Australopithecus afarensis, which is an intermediate/transitionary hominoid, which is a type of ancestral ape- a cross between ape and human if you like.
