Does anyone still eat down home southern cooking?

I love collard greens and ham, mashed potatoes and gravy, breaded and fried porkchops and homemade biscuits. Every once in awhile I break down and eat it, but I am not suppose to. How about you?

Funny you should ask.... I'm not a Southerner, but now I'm hungry! Speaking of the unhealthy part, though, I was on the USDA's website looking for something else, and found this recipe pamphlet-- "Heart Healthy Home Cooking African American Style". It's got some reduced-fat/sodium/etc Southern recipes (you can print it out from this page): nhlbi.nih.gov/health/public/heart/other/... The recipes actually look good, not full of applesauce and oat bran (fine if you like those things, but in low fat recipes, they tend to end up where they don't belong, IMO!) The food I grew up on! Macaroni and cheese, oxtail stew, collard greens with ham hocks, string beans with smoked turkey wings, mashed potatoes with gravy, biscuits and sausage gravy, salmon croquettes, corn bread cooked in a cast iron skillet, rice and gravy, grits and gravy, chicken sausage, lima beans and ham hocks, fresh corn, and bacon grease in everything! Now, when I go home to Mom and Dad's, I'm lucky if I can find a TV dinner in the freezer..

Soutern cooking I live in Nashville,Tn. And southern( unhealthy) cooking and eating is alive and doing just fine.

A meal I would love to eat but no one in this household will touch - Chitterlings! My neice and great-nephew say NO, they stink! I love chitlins with a side of thinly sliced onions marinated in vinegar, a slice of cornbread, spaghetti and coleslaw!

These days no one knows how to cook from scratch, nor do they appreciate the cultural significance of down home food. What a shame! My grandma's are probably spinning in their graves.

But, my family will appreciate the peach cobbler I'm making today - and yes, its from scratch.

Parsnips - don't think I've ever tasted one but see them on all the cooking competitions on TV. Do you eat them?

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest. A good paper is one that people get drawn into because it reaches them ln some way.As for me WW11 to me, I think of the holocaust and the effect it had on the survivors, their families and those who stood by and did nothing until it was too late.
