Well in my household the situation is a bit similar. The main time in cooking is consumed in the initial preparation rather then actually cooking the food. I manage by doing the initial preparation for the week on Sunday.
Like for e.g. Chop up the veggies, grate the cheese, boil pulses, marinate the chicken etc and keep it in the freezer. On the week days when I come home then all I need to do is cook it or pop it in the oven. Some e.g. Of quick and easy dinner can be as follows *Roasted Chicken (Marinate it over the weekend and just pop it in the oven when required) *Pizza (buy the readymade crust and grated cheese and let the kids so the topping) *Burgers (you can buy frozen patties or make your own over the weekend) *Fish/Chicken Fillets Marinate it over the weekend and just fry it when required) *Noodles: kids can easily make it.
*RIce dishs: e.g. Chinese rice. (Chop the veggies over the weekend) Well I am Asian so not really sure what kind of food is preferred at your place. But I hope the above list helps.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest. A good paper is one that people get drawn into because it reaches them ln some way.As for me WW11 to me, I think of the holocaust and the effect it had on the survivors, their families and those who stood by and did nothing until it was too late.
