Pure convection: no visible heating element, oven air is heated before its "blown" into the oven. All that I use at my catering biz, we have two 6 deck convection ovens and I love them. It's not so much easier, but it is way faster and more even. That being said, it does take some getting used to via experimentation.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
