Gumbo is a Gulf Coast stew or soup started with roux noir, almost always based on the trinity (the Cajun version of mirepoix), traditionally thickened with sassafras file or okra. Other than those elements it can have just about anything in it.
It's funny that you mention it, I think I heard this word for the first time today when watching "Hart of Dixie" on Hulu, in the episode, they have a gumbo contest to see who cooks the best gumbo. I'm still not sure what it is, but it's clearly some type of food...
