It's called FERMENTATION. In the rumen, anaerobic bacteria and microorganisms live in the rumen creating an anearobic environment where feed, like grass, is fermented to allow the break down of these linkages. The fermentation process allows for better nutrient absorption and digestion in the other two chambers of the cow (not including the reticulum, which is just a chamber that stores foreign particles that could damage the animal's GI tract.) Water is squeezed or absorbed in the omasum, and protein digestion occurs in the abomasum.
Protien digestion wouldn't happen as completely as it would if it weren't for the fermentation process that happens in the rumen.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
