From preview you can save it as a pdf then open the pdf in acrobat or word and save to most of those other formats . Doc, rtf, or txt.
Some of these formats aren't going to preserve the image data, for example translating a JPG into TXT will result in a text file full of random characters. Are you sure this is what you want? You can embed a JPG in a Word DOC, a WordPerfect WPD, a rich text RTF file or PDF, for example, and it'll preserve the image.
