Handygal, You can get a saddle valve kit at most hardware or big box stores. They attach to a cold water line. There will be a connection to the water line in the back of the refrigerator.
There will be a compression fitting that you connect to that line. You may need to drill a hole in the floor or a side wall to get the other end of the line to the water line to be connected to. The saddle valve fits onto the copper water line by screwing the valve onto the water pipe.
Connect the compression fittings onto the end of the plastic feeding the refrigerator. Then there will be a small valve that's turned and it punctures the copper water line. If there is a drop or two of water leakage, just tighten the nut a little more.
It will take a little time, but fairly easy. More.
