Day of the Dead is celebrated on November 2nd. The previous answer stated that it was celebrated on Christmas Eve having to do with Jesus' birth. It has nothing to do with Jesus.It is a day when the veil between the living and the deceased is supposed to be thin.
So people construct amazing kites with messages for the departed on their tails. They also decorate the graves and graveyard and have a celebration there. They make a traditional dish called fiambre.
They also build altars in their homes and bake breads and sweets that look like bones, skulls, and coffins.
