How do you find the key signature with sharps?

If the key signature is made of flats, the line or space that the second to last flat is on is the key signature There is an order of flats, the order that they're always in: B, E, A, D, G, C and F. So if there are three flats in the key signature, you automatically know that they are B flat, E flat, and A flat, in that order, and therefore know that you are in E flat major So what happens when there is only one flat?
