When you are in a real hurry but still need to pack a lunch these quick roll-ups are just the thing. They are also healthy and are perfect for people who cannot eat wheat or are avoiding bread for dietary reasons. Heat up some corn tortillas or leave them out for a while so they become soft.
This will make them easier to roll up later. Do not over cook. Just heat enough to get them pliable.
Find a flat surface and lay out a piece of plastic wrap. Place one tortilla on top of the wrap towards the bottom. Put some veginase or similar spread on the tortilla.
If you are using tuna or canned salmon skip this step. Add the mayo to the tuna/salmon instead and mix it well. Put about two slices of turkey or a couple of spoons of the tuna/salmon onto the tortilla.
