Safer than you think. I learned on an NPR broadcast recently that, the information on products has 2 meanings. The 1st one, 'Sell by' means that it must be removed from the shelves by that date.

The 2nd one, 'Best before' means that you should use the product before that date, as the contents will begin to lose their shelf life (taste, vitamins, etc. ) after that date. So, eggs that were refrigerated in transit, the store, and immediately refrigerated in your own kitchen (less than 40 degrees), can be safely eaten for 30 days. Now aren't you glad you asked?
