How to capture Asterisk's AMI and AGI traffic using WireShark in a textual format?

You can't listen asterisk events using AGI. AGI is CONTROL interface, no events send to it. All events go via AMI.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
