One of the lenses I use... ... is the Canon EF 75-300 f/4-5.6 III USM telephoto lens. By comparison it’s inexpensive and I can’t complain about the results. It does not have the built in image stabilizer, which only helps with your motion anyway, so you may want to take a portable tripod as well.It runs about 170 bucks.
The next step up would the the Canon EF 70-300 f/4-5.6 IS USM thats the version with the built in image stabilizer. It will run you about 550.00. Amazon has always had he best prices for lenses that I can find.
Another option for you would be to rent a lens. Places like rentglass.com is a great way to use a high end lens without the cost. You can rent the Canon EF 100-400 f/4.5 - 5.6L IS USM for about 45 bucks a week.
Amazon price for that lens kit is about 1600.00. I couldn't find all of the lenses I indicated on th amazon link to askville, but if you go to amazon.Com and search you'll find them. Another thing you might want to consider is picking up a few lens filters, especially a circular polarizer (CPL) and a standard UV filter.
If your shooting on bright sunny days you going to want the CPL to get better color to your pictures. I love my 70-200mm, but it is expensive I own a Digital Rebel and I also own a Canon 5D. I’ve used my Canon 70-200 IS on both and it is awesome. On the Rebel it is like having a 112-320 lens, which is a very good zoom range.
You can put a 2X teleconverter on it for even greater range. If you want landscape shots, I would recommend the Canon 10-22. If you want a good walk-around lens, I would recommend the Canon 17-55 IS.
None of these lenses are cheap, but they will last and have great resale value. Many people buy the Sigma and/or Tamron brands, and are very happy with the results. Both brands are significantly cheaper than Canon.
You may be able to rent lenses either in your hometown or at your travel destination. This is often a bargain, but be very careful that you don’t break or scratch the lenses. I would suggest insurance especially if you rent in the states to take overseas.
Always pack your camera gear in your carryon, of course. I recommend Lowepro bags for this. They have a size for everything.

Canon 70-300mm Image Stabilizer lens I assume your current lens is 18-55mm (it's default lens for Canon Digital Rebel). I think Canon 70-300mm Image Stabilizer lens (~$560) would be good choice. With crop factor 1.6, this lens would function as 110-480mm.
Really nice zoom. Image stabilizer helps to take sharp photos in low light conditions. This lens is not huge and it is not too heavy.It's pretty good for travel (my experience).
For traveling I would recommend an all-in-one Unless you’re a pro (in which case I would say pack two or three camera bodies with prime L lenses attached)... I would say that an all in one super zoom would be the way to go, that way you don’t need to carry any extra lenses with you. So here are your choices: 28-300 without stabilization by Canon, Sigma or Tamron - Cheapest option 18-200 without stabilization by Sigma or Tamron - The extra wide 18 is sometime very useful when you want to capture an entire scene. 18-250 by Tamron - Really wide zoom range.18-200 with stabilization by Sigma - Very steady images without a tripod 28-300 with stabilization by Tamron - I don’t think it’s available yet.
And if money is no object: The professional (and heavy) $2200 Canon EF 28-300mm f/3.5-5.6L IS USM Lens Your looking at between $250-$700 for most of the other lenses. Click on the amazon product link to see the real prices because the list prices are often way off. So a couple of closing thoughts... Wide is still useful when traveling and if you can leave your kit at home (or as a backup in your luggage) the easier it will be on you... A 28 will easily get most wide shots with the exception of large groups of people in smallish rooms.
Image stabilization really is valuable when you go over 100mm in anything less than sunny conditions.
