I think you should choose something more unique and authentic than the typical restaurant cuisine. Something from the coastal regions or tropical regions. By the way Spanish rice is neither Spanish nor Mexican it's actually an American invention.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
