I'll be honest...i wouldn't like someone to end the streak whatsoever, not only because its part of Undertaker's legacy and the best streak in sports entertainment history, but because I don't see how the WWE will benefit from making someone breaking the streak. Let me explain: If, there was someone that could have broken the streak, then it would be nice if he was an upcoming very talented wrestler in all aspects(in ring skills, mic skills, charisma, gimmick, potential etc)(for example Brock Lesnar of 2002, Cena of 2003, Orton of 2004, CM Punk of 2006 and a few more) so by making one of these wrestlers beating Taker at Mania, they would get a lifetime push and they could make a career out of it for many years to come. Although, the ones I mentioned already made a name for themselves and keep growing *inside* the company, so since they are already huge stars, it would be pointless to have someone defeating Taker.
From the other hand, even if Taker is getting old, he can still have a small storyline once per year(starting a few weeks/months before Wrestlemania each time) and get his match at the grandest stage of the mall. Wrestlemania would not be empty without Taker, but it wouldnt be the same either. Especially the way WWE pushes the whole streak story(even if everyone knows that The Undertaker's contribution are much MUCH bigger than his wrestlemania legacy), it doesn't seem like they will end this any time soon.
Not sure if WWE will include Taker every year, but once in a 1-2 years we will be seeing Undertaker compete in a wrestling match at Wrestlemania. It is his gimmick that just can't be replaced. Finally, WWE somehow, someway, they sort of replaced Austin & Rock with other wrestlers, like Cena, Punk, Orton and the rest..other times successfully and other times, not.
The Undertaker's gimmick and stature will be very difficult to be replaced, in all aspects and i'm not saying this because he is my favorite wrestler(ok maybe I do, lol), but because of his unique gimmick & legacy. But to answer your question hypothetically, IF I had to choose a wrestler to beat Taker at Mania, that would be CM Punk. He is a fantastic wrestler, very entertaining both as a face & as a heel, one of the best independent circuit wrestlers before his WWE time, and he really knows how to sell his moves & gimmick.
I've seen an awesome improvement in his mic skills the past 3 years and that's a MUST for the WWE's style of wrestling. Plus, he is still young enough (33-34), which means he has many years to come in front of him, in order to make an even bigger legacy for himself, by beating the undertaker and selling it right. I would say the same for Cena, but already Cena is being accused for winning everything, so having him getting that spot as well, would make most of the fans riot.
I respect Cena very much, even though im not a big fan(i like him though in general), but I don't think it would be a good idea of having him be the one who ends the streak. Not sure if Cena fights this year Undertaker at Mania, but I think it will happen, whether its WM29 or WM30! And Undertaker will defeat him.
Even though I will be very nervous during this match because the possibility of having Cena beating Taker at WMania, will be much higher than with any other current wwe superstar. Plus, it will be a box-office hit for sure, and WWE won't miss the chance to book them against each other, now that Taker still got it. So whether it's WM29 or WM30, it will be a very intensive match.
As for your last Q: Randy Savage, Mick Foley, Kevin Nash are some obvious choices/ideas. But you never know with the WWE. Many more wrestlers deserve to be in the HOF, but for diferrent various reasons they might never get inducted.

Pass the torch to john cena , cena has already accomplished everything in the wwe , so why pass the torch to him , as the torch is passed to that guy which is new or will carry the wwe on his shoulders but cena already is the face of wwe and carrying wwe on his shoulders for the past 6-7 years. Some people will say brock lesnar should broke the streak but why? , lesnar is going to leave after WM 29, and I doubt his full time return ever going to happen , so lesnar is not a good choice I think kane is a good choice to break the streak.
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest. A good paper is one that people get drawn into because it reaches them ln some way.As for me WW11 to me, I think of the holocaust and the effect it had on the survivors, their families and those who stood by and did nothing until it was too late.
