Is Emma Watson giving up her role as Hermione Granger?

No. Even if she did want to, she could not just 'give it up'. Actors and actresses are employees.

They enter into legal contracts to complete a movie or a series. Emma Watson is contracted to complete the series playing the part of Hermione Granger She did however consider giving up the role after the fifth film (Order of the Phoenix) but decided not to because she didn't want to see someone else in the role.
