Is there a way to make the coverflow in iTunes scroll slower because one click of the scroll wheel on my mouse makes it skip ahead 3 albums and I would like one album per click?

This is quite simple - it's just the setting for the number of lines your mouse's scroll wheel is set to skip per click in Control Panel > Hardware > Mouse Click on the Wheel tab and set the lines to scroll to 1 instead of 3.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
