Golden Syrup I have a friend with allergies to corn syrup. When I cook for him I use Lyle's Golden Syrup, a kind of sugar solution. It does the same thing as corn syrup in recipes: it prevents sucrose crystals from forming.
I've substituted it for corn syrup in many recipes with no difficulty. PamPerdue's Recommendations Lyle's Golden Syrup 454g Average Customer Rating: 5.0 out of 5 (based on 4 reviews) .
Old fashioned syrup... really, just regular old sugar syrup will do (and it's actually fun to make and cheap)... here's one from the web: cooks.com/rec/view/0,1823,147170-227206,... it may take a little practice to make because determining the "soft ball" stage in making syrup/candy can be challenging; but once you get the hang of it you can proceed to making all kinds of candy... oddly, i've seen some sugar syrup recipes call for some light corn syrup... now, really! Enjoy! .
Sugar plus liquid will usually work fine In most cases, you should be able to replace corn syrup with sugar. The usual rule is as follows: 1 cup corn syrup can be replaced by 1 1/4 granulated sugar (or light brown sugar) plus 1/4 of liquid (use water or whatever liquid is specified in the recipe you’re using). Other possibilities: Lyle’s Golden Syrup (use in same quantity as corn syrup) -- Lyle’s Golden Syrup is widely available in the UK, but possibly harder to find in the United States.
Decent sized supermarkets may stock it in the British section of the International aisles, I suspect. Honey (use in same quantity as corn syrup) -- honey is quite a bit sweeter than corn syrup, but if the recipe doesn’t call for a lot of it, this may be an effective substitute. Molasses (use in same quantity as corn syrup) -- molasses is darker, obviously, and also stronger in flavor. It’s also less sweet than corn syrup, so is probably your last resort.
If you’re baking something like cookies or bread, I’d suggest you try the honey substitute. Honey, like corn syrup, is hygroscopic. Hygroscopic substances attract water molecules from the air.
What his means for baking is that cookies and bread baked with honey rather than sugar will tend to stay softer longer. Sources: General knowledge rattling around in my head..
Yes The most direct substitute I can think of is cane syrup. It's very popular in the South and is made from sugar cane plants. Check the label to make sure it is "pure" cane syrup.
Some commercial manufacturers mix corn syrup in it to boost their profits. It also has a distinct flavor, but many people like it. You can make your own syrup by mixing sugar into lightly boiling water.
Start out with 2 cups of sugar to 2 cups of lightly boiling water. I have done this a few times to produce a pretty thin syrup for certain recipes. To get a syrup as thick as corn syrup you'll have to add a significant amount of sugar.
Experiment to see how much sugar you need to get the consistency you are looking for. Try adding 1/2 cup of sugar at a time after the first 2 cups are dissolved. Don't forget to stir frequently and gently while doing this.
Also, you could use light molasses and dilute it with water to get is the right consistency. Molasses has a distinct flavor so experiment with small amounts until you decide if you like it or not. Sugar There are several solutions like palm sugar etc. There’s also a product that you’ll probably find in the international food section of your grocery store. It’s made from sugar cane and it is sometimes called cane syrup. Ask your grocer if you can’t find it.
(read the labela btw... unfortunately, some manufacturers are adding corn syrup to this stuff as a stabilizer). Be a bit careful how you use it. Taste it and get an idea of sweetness.
It’s not the same as corn syrup (glucose) for making a sugar reduction either. Since corn syrup is a longer-chain sugar, it prevents crystalization when you’re melting sugar or making fudge. Cane syrup (sucrose) WON’T prevent crystalization because it is the same form of sugar as ... well ... sugar.
