We go by what tastes good. Dave likes to make deliciously balanced wines, so when we have all the parts separate he will take an acidic wine and blend it with a more tannic wine to make it more balanced, and so on. More.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
