What are chestnuts?

Enclosed in glossy, soft, mahogany-colored shells, chestnuts are the seeds of the chestnut tree (Castanea spp.). A chestnut is about the size of a large walnut, with the shape of an acorn. The tree flowers from late June to July, producing dense white flower clusters, which form the spiny round burs that house its thin-shelled nuts.

The chestnuts develop inside their prickly capsules in mid- to late-September and are ready for harvest by October. When first picked, chestnuts are starchy, but after a few days, some of the starch turns to sugar, giving these large, chewy nuts their characteristic gentle sweetness.
