Kumquats are little bitty citrus fruits. They look like an orange, but are the size of ripe olives. They are a bit backwards from most fruit, as the rind is the sweet part, while the center is tangy.
Most people eat the fruits whole, or eat the peel. (Or, use a zester to create toppings for salads, fish and other stuff. ) Kumquats can be used in a variety of dishes, but my favorite use of the little fruits are in homemade wine!
Some people even replace kumquats for olives in their martini! They are probably most popular preserved, either in a jam, jelly, or marmalade. The juice is also added to tea, or they are candied with salt and sugar.
One interesting use that my family loves is the kumquat salsa. We took a version from Simplyrecipes and made it our own. The original ingredients call for: * 2 cups chopped cleaned and thinly sliced kumquats * 1/2 cup chopped red onion * 1/4 cup chopped fresh cilantro * 3 Tbsp olive oil * 1/4 teaspoon red pepper flakes * Dash of cayenne pepper * Pinch of kosher salt We leave out the onion, and add tomato instead, and up the cilantro a bit.
Also, I add just a tiny pinch of brown sugar. Cut everything to about even size, then let it sit for about 2 hours in the fridge. Use on salads or most any type of fish!

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
