I think the Alton Brown recipe for peanut sauce and the springs rolls to go with them is pretty tasty... foodnetwork.com/recipes/saras-secrets/sh... It was a recent episode of Good Eats which covered Asian noodles. The noodles in this case are the rice noodle papers used for the wraps of the spring rolls. Give it a try.
Check out a book called "Keo's Thai Cuisine" I'm sure you can find it on Amazon. Com or Half. Com or Ebay, it's old but it's the best learn to cook Thai cook book ever!

Heat oil in a saucepan over medium heat. Add garlic, and saute about 1 minute.
Add remaining ingredients; whisk until smooth. Reduce heat to low, and cook for 2–3 minutes. Remove from heat; set aside until ready to use.
