They are probably more expensive than what you have been using, but you can order them off Amazon. They aren't too expensive and are worth the cost.

When it comes to selecting the wood chips for my electric smoker, I am quiet meticulous of selecting them in the sense it may affect the flavor of your meat. As far as mesquite wood chips is concerned, I am not really inclined to using it because based on my experience, this wood chip causes a bit of bitterness to the meat. With regards to the kind of meats you stated, I would suggest you use Oak wood chips.
When it comes to fish I would advise not using hickory, since this would somewhat a little extreme. Furthermore, proper temperature settings should be made when smoking poultry meat, the suggested range would be about 225 to 275 degrees. I bet if you had the proper setting your turkey would be crispier than what you expected it to be.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
