Plaster of Paris, setting time depends on two essential things. First the colder the water is when mixing the powder to a paste and controlling the drying (dampening the surfaces). You must mix powder into measured amount of water trying to make it as far toward soft almost runny as can be done w/o flowing from work area.
Then covering with thin cloth that's alittle damp that you spray with water as necessary to control evaporation for the 75 min settting time your looking for. Do not attempt tempering (adding more water to the initial mix, do allow 1 to 5 mins. To stand after stirring before using) and fold mixture only enough to keep remaining material consistent.
An added thought is to have a bottle of wine, so if the wall doesn't come out exactly wright you won't be quite as concerned. Or' voua. More.
