What HTML can I put in an email signature that has special characters and not have it mess up. I've been told that my signature doesn't always look right. I think that means that the email clients that don't support HTML do that.

Use a VCard That would be correct it is not on your side, in business it is best to use a text signature that way you don't have any problems, you can always attach a vCard that has HTML capabilities. You will find that in Outlook. Just create a contact of yourself.
Create a new contact in Contacts of what you want your expanded vCard to look like. Remember this will go to everyone you send mail to so don't include personal information such as home number, address unless you really want to! I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
