As the wife of an Italian man, I have discovered that there are several ingredients are very important to your providing them with good food. Tomatoes are a big deal in Italian food, you will also find that cheese (romano, parmigiano), you will also find that pastas and garlic are a really big deal in Italian foods. You may find additionally that most Italians cook foods that use wine to taste, as it gives their food the flavor of the wine.
Most of the grocery stores sell the really typical Chinese food ingredients like soya sauce, tofu and stuff.

I think you need to go to an Asian food market (unless you live in Hawai'i) to find the traditional ingredients such as Kafir lime leaves, chiles, tofu, fresh lemon grass, fish sauce, fresh basil etc If you can get these ingredients - the book I learned to cook on was called "Keo's Thai Cuisine" It is still in print and easy enough to find at Borders Books or on-line. It was written by a Thai restaurant owner in Hawai;i. The recipes are delicious and easy to make, the instructions are clear and there is a photograph of each ingredient so you know what to buy.
The only challenge, is - if you don't live in Hawai'i or near an Asian grocery store - getting some of the ingredients. I still make Thai food on occasion, but since moving to California I mostly have to leave out what I can't find and it doesn't taste authentic.
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
