Usually I don't eat breakfast except sometimes on Sundays. I know- I should know better since I have been in healthcare for so many years, but I eat because I have to, not because I am hungry. Many times I don't feel hungry.
Anyway, my favorite breakfast though it can be eaten at anytime, is an omelet. My favorite is American cheese and mushrooms, though just about any type of cheese is fine.
Pancakes. Followed closely by a ham-potato-onion Spaniash-style baked omelet. Also, for really special occasions, make banana bread French toast - like regular but with sliced banana bread instead of white bread. It is SO good topped with maple syrup, or with strawberry jam.
Chocolate sauce on top would be good, too, if that's not too sweet for breakfast.
