Basically, the... configuration and the number of stores. A Strip mall is generally considered a single string of stores along a roadside with a shared parking lot. They're generally a block or less long--but key is stores only on 1 side, only loading dock areas and trash around the back.
You usually can't get from one store to the other through an INTERNAL structure that contains all of the stores--in other words, you may have a walkway out front that connects them, with shelter from the weather, but it WON't usually be an enclosed structure--you have to go outside to go store-to-store (this may change some in really COLD places). A strip mall may or may not have a big store in it that draws customers in and increases the possible business to the rest of the stores. Oftern the store owners pay fees to the over-all building owner/developer that cover lot maintenance and snow removal.
A Mall is bigger, many more stores, and double sided, approach from multiple entrances, surrounded by parking areas, and all stores enclosed with direct access to most stores THROUGH the mall doors, not the individual stores--except for big "Anchor" stores--the Sears, Penny's or other huge-department store that draw their own clientele to the mall, thus attracting customers to the whole installation. Malls may also include free-standing stores within their property boundaries--car repair or tire places, restaurants, bank drive-throughs--that may not be commected directly to the main building, but are within the property. We have a good-sized mall here in Lanc County PA (Park City), with many stores and 4 or 5 anchors.

Strip mall vs mall A strip mall is a collection of stores, usually in one long row but sometimes as 2 or 3 sides of a square, where access to the stores is all OUTSIDE and to get from store to store, you go outside. With a regular mall, some stores have access to the outsides (anchor stores, restaurants) but most open to the inside, and you walk around in a climate-controlled area to get from store to store, rather than going outside. Basically it's like the different between a "motel" (rooms open to outside) and a "hotel" (rooms open to inside)..

Fully enclosed malls are climate controlled and there are mall services (restrooms, information, maps, food court, benches and rest areas, fountains, seasonal decoration etc) in addition to the stores.
When walking from store to store your are walking inside (or at least isolated from vehicular traffic).
The way they're built A strip mall has all the doors to where you're outside going in & out. They're not connected where you can go directly from one store to another. They're on just the ground level.
A mall is enclosed where you go in a central door & there's a big center area that's enclosed with benches & chairs that you can rest in. There's food courts, restrooms, etc. You're much more comfortable in a mall, as it's climate controlled & you can go store to store without going outside. They're 2-3 stories high with elevators & escalators to get from one floor to the next.
