The dendrites and axons of our neurons do resemble galaxy filaments, but the resemblance is superficial at best. In reality they are very different from each other. Dendrites and axons are actual physical structures through which electro-chemical signals are sent.
Galaxy filaments, on the other hand, are strings of galaxies loosely held together by gravity. They're mostly just empty space, and there is no transfer of material going on through them.
The resemblance is superficial and you suggest we therefore may have superficial control of the Universe. The resemblance of a human brain cell to a bunny brain cell is much more than superficial. Might I suggest that we have a much more than superficial control of bunnies.
