Why didn't NASA make the Dragon X spacecraft into a miniature version of the space shuttle without all the?

Aerodynamics means "activity of air". Once you are in the vacuum of space, there is no aerodynamics at all. Spacecraft do not turn.

If they must change direction, they have to use direct thrust to stop going this way, and start going that way. Changes in speed and direction are usually small, since they would consume a very large quantity of rocket fuel.
