Why do Flights get cancelled if there is Ash in the clouds?

Because they represent a huge risk to the aircrafts, to start off they difficult visibility a lot reducing it to zero in some places, cause engines failure and controls disruption.

The ashes melt to a lower temporature than the engine's temperature, thus it can melt, slip around and reach the turbines affecting the high pressure flows which can cause the engines to stall.
