Why do some pizza places put the toppings (pepperoni, etc) under the cheese?

I once asked the guys at one of my fave pizza joints that does this... They made their pizza in an old-fashioned brick oven, and slid it in and out on those big wooden paddle-like things. He said it helps keep them from losing toppings in the oven when they slide the pizzas. Makes sense, huh?
