Why is Prince Charles a prince and not a duke?

He is a duke, and a prince, as well as a few other things. But no royal ever goes by a name like 'Prince Duke Earl Charles Instead, the person picks one title to be known by. Most people will choose the highest they have, and hence he's called Prince Charles.

But as an opposing example, his wife, Camilla Parker Bowles, goes by the title of the Duchess of Cornwall, rather than a higher title she owns, Princess of Wales.
