It isn't white it's a cream color and the main ingredient isn't the vanilla extract, it's the cream.
Regarding your Calphalon: The rivets and stainless base that holds the handle in place need constant cleaning Grease seems to polymerize and turn brown. It becomes akin to a lacquer. Be careful what you use to clean it.It can remove the black color from the pan and expose the aluminum.
And don't stir with anything that could scratch the surface - aluminum isn't good stuff - you don't want it leaching into your foods. I've been replacing my Calphalon with Le Creuset.
If so they did warn me against doing so. They said that it will build up and be very difficult to remove. They also suggest heating up the pans before adding any fats to the pan.

I never used nonstick spray on the pans. I tend to wipe the bottoms with olive oil when necessary. Even if you just boil water you'll end up with the brownish buildup on the rivets.
I've tried using a toothbrush and the stuff you use to clean glass cooktops and nothing has worked. Heating up aluminum is tricky. It's fine until you reach a certain temp and then it's dangerous.
Wok style stir frying is a no no in aluminum. I like the porcelain coated cast iron much better and it's so much easier to clean.
Often, vanilla ice cream is made with artificial vanilla. Artificial vanilla can be clear. The brown color comes from leaching out various other things in the vanilla pod.
Those other compounds are the reasons that real vanilla tastes better than artificial. (Though when mixed into something strongly flavored, like chocolate chip cookies, the differences are actually too small for many tasters to notice. )But even if you make your ice cream with real vanilla, it doesn't take a lot.
Really good ice creams don't make extracts: they boil the vanilla bean with the cream. It does tint the cream a bit, but not all that much. You're talking about a LOT of cream here (say, a teaspoon or two two a pint of cream).
One other thing: ice cream is full of bubbles. A good ice cream will be 20% air; cheap ice creams will be 50% air. Bubbles tend to splash light around, mixing up the colors and appearing white.
The primary one is the middle one: there's just not that much vanilla in vanilla ice cream. It's potent stuff.

It is white because of the cream. Around 70% percent of a vanilla ice cream is white cream and that's why the brown color of the vanilla extract will not be visible.
Because in a quart of vanilla ice cream, there is no more than a few teaspoons of vanilla extract. The rest is mostly milk. Put a few teaspoons of vanilla extract into a quart of milk and you won't see much colour change.
