Both Google Docs and Calendar will be fully viewable on the iPad. But, as or right now, Google Docs cannot be edited. This is assuming that Google will just keep Google Docs on mobile Safari.
Google right now does not have an app for Google Docs on the iPhone or iPod Touch. So you can see your documents, but not edit them. If you want to have the ability to edit Google Docs you can buy an app like GoDocs http://itunes.apple.com/us/app/id348792440?mt=8 from the app store and have the ability to do this.
Again, this is assuming that Google doesn't change their mind and make their own app for the iPad. As far as Google Calendar is concerned, it should work on the iPad as well. You will be able to edit google calendars through the Safari app.
I believe you will also be able to use something called Nueva Sync, which is an over the air sync app (www.nuevasync.com). I like it because I can change the calendar app or Google Calendar and they stay in sync over the air. No having to hook up to iTunes to sync calendar events.
I use it for my iPhone and I am assuming Nueva Sync will work for the iPad as well. As far as any apps that won't work on the iPad. It kind of depends on what your definition of work means.
You will be able to access pretty much all of Google's apps on the iPad, Docs, Gmail, Voice, Calendar, Picasa, etc. Through the Safari web browser that comes on the iPad. Google has done a good job of making most of its popular apps mobile friendly.My guess is that you won't see any dedicated apps for any of these from Google because they are in direct competition with Apple and since Apple doesn't like their direct competition, they probably won't accept any Google made apps ie. Google Voice for iPhone according to Apple is "still under consideration", it has been that way for over 4-5 months now.
It is Apple's way of saying that they are looking at it, but in all reality, there is no way Google Voice gets onto the iPhone as a native app. Ok, so there you have it. I hope I was able to answer your question.

At the moment all we know for sure is the iPad uses iPhone OS and runs iPhone apps. So it is close to certain that if you can do what you want on an iPhone, either with Safari or an app, you will also be able to it on an iPad. I imagine Google will also release apps to make it even easier to use their services on an iPad.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
