Peel, slice the eggplant, dip slices in egg and breadcrumbs. Fry the eggplant in hot oil (don't over do the frying or it will be mushy)layer the eggplant in a pan like you would lasgna with sauce (homemade is best) and mozerella cheese. Sprinkle parmesan cheese on every layer as well.

Put in 350 degree oven and bake until the cheese melts. About 25 min in oven depending on how many layers of eggplant and cheese. Slice a piece of italian and fill it with the eggplant Parm.

BTW it is against the law to have this without a glass of wine. (a big glass, not those tiny glasses)enjoy. It is a lot of work but worth it on special ocassions.
