A chicken salad recipe... I went to a restaraunt tonight and on the menu, they have this wonderful sounding chicken salad (I did not see it until after I had ordered, darnit). It's described as "delightful combination of white meat chicken, spices, pineapple, baby sweet peas, and harvati. " I have never heard of pineapple and peas in chicken salad before!
I'd love to make this but i'm not sure what kind of spices would go well. Any ideas? Or other similar chicken salad recipes?

Several options One possibility would be curry powder. "Curry powder" is a collection of spices all by itself, usually turmeric, cumin, mustard seed, and coriander. It's not actually hot or spicy, though you can throw in some red pepper flakes if you want some extra zing.
Fresh cilantro would also go beautifully, too, if you have some. The classic herb to go with the havarti would be dill, and it would go beautifully with the chicken and peas, but I think that would taste weird against the pineapple (though a quick Google search shows plenty of people pairing dill and pineapple). Caraway would go nicely with the pineapple, along with black pepper and mustard powder.
Maybe throw a few cumin seeds in there, too. (Toast the caraway and cumin in a hot pan until you can smell them. ) And, of course, there's garlic.
You can never go wrong with garlic. In a recipe like this I'd even be tempted to put it in as slivers for hits of garlic flavor without becoming overpowering. Personally, I'd add a bit of mayonnaise to this; their description doesn't call for any binders.
You could make an oil-and-vinegar dressing instead, with whatever spices you choose, but I think that mayo would go better. (I happen to like mayo. ) .
This one's different, but I really loved it It’s for a curried chicken salad that might be similar if the spices in the salad you had were curry. I too had gone to a restaurant and had a wonderful chicken salad sandwich, so I duplicated it at home. I don't have a "real" recipe for it, but it's easy to throw together: Curry Chicken Salad Cut up cooked chicken breast into salad-sized pieces Add raisins and walnuts Stir in some mayonnaise until moistened Sprinkle in curry to taste.
I used regular grocery store curry (i.e. , something like Durkee's or McCormick, nothing fancy) This is really good in a pita pocket, a sandwich roll, or just on a plate with some lettuce leaves. Chicken, pineapple salad, my way. Here you go....I went thru my recipe box and , with a little twixing, I think this will do it...I hope. And, just to let you know, chicken and pineapple goes great together...We have chicken kabobs on the grill with pepper, onions and pineapple.
Chicken Salad: Serves: 4-6 3 c. Cooked chicken, diced 1/8 t. Lemon pepper 1/4 t.
Salt 1/4 t. Paprika 1 c. Par-boiled fresh or frozen baby/petite’ peas (Par-boiling leaves them a little crispy and won’t get soggy) 1 can sliced water chestnuts* 1/2 c.
Celery* 1/4-1/2 c. Scallions, thinly sliced* 1 c. Fresh pineapple, cut into bite-size chunks (You could use canned chunks, but...) 1-1/2 c.
Harvati (cheddar, mozzarella, pepper jack are some other choices), chopped into bite-size pieces 1 c. Mayonnaise 1 c. Sour cream 1 pkg.
Dden Valley Ranch style dressing 1. Mix together, chicken, lemon pepper, salt, paprika and water chestnuts, celery and/or scallions, if using. 2.In a small bowl, mix together mayonnaise, sour cream and dressing.
3. Toss dressing in chicken mixture, to combine well; add peas, pineapple, and cheese, blending gently. * These are just what I would add...It is up to you!

Interesting combination Hmmm... Interesting ingredients, esp. The pineapple. I wouldn't go too crazy with added flavors, so I'd add freshly ground pepper, a little salt (or not if you avoid it), fresh flat leafed parsley, and tarragon.
I think the tarragon would be key and a nice addition to the other flavors. I LOVE chicken salad, so I've done some experimenting. And again, tarragon is an amazing flavor in almost any chicken salad, and that's probably my favorite chicken salad... kind of basic w/chopped parsley and tarragon.Okay... here are some bits and pieces of things I've added (other than what I mentioned above), in various combinations... your choice: dreid cranberries (or even raisins) chopped walnuts of course I usually add chopped celery Ohhh.. don't forget the cranberry sauce on the bread if you're making a sandwich... seriously, either jellied or not.It's another wonderful added flavor and texture.
Not with the pineapple though. You wouldn't want to diminish either one of those flavors. If you like fresh garlic... a little fresh crushed garlic chopped or grated sweet onion add a little mustard to the mayo If you're serving your salad on a bed of lettuce (not bread), the chopped walnuts are a nice garnish.
Add a little paprica, little chopped parsley as garnis as well... you have an attractive presentation. Good luck and enjoy your chicken salad! I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
