I've tried all different kinds of recipes, techniques, added ingredients, etc. I CAN'T CRACK THE MYSTERY! They used to be so good, flatter, chewier, not dry, but had a lovely snap to them. I can't figure out what I've inadvertently changed to cause this!

Other than using regular, non-self-rising flour, to get a less chewy cookie, baking soda makes cookies chrispier.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
