Beaches are always a great idea, and there's a few to choose from in SoCal. A couple of other suggestions: a spa weekend in Palm Springs, or a trip to San Diego (where there are beaches + nightlife). It really depends on what she likes, which you know best.

I am not sure where you are in Southern California, but the Temecula wine country is quite lovely and surprisingly close. If you are looking to make it a really special occasion, you could splurge for a limo tour. That way, you can both enjoy all of the good wines without having to worry about driving!
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
