I was raised on bean dumplings. It looks bland (even SOUNDS it too), but it’s a dish you’ll grow to love! Cook your navy beans with a chunk of ham or fatback.
Cook ’em "soupy", that is, you want relatively a lot of liquid. Prepare your dumplings. Make your favorite homemade biscuit dough... you don’t want nuthin’ from a can!
Roll out the dough to 1/4 inch or less... sometimes I’ll roll it out to 1/8 inch. Use your pizza cutter to cut the dough into approximately inch and a half squares, and drop gently into the cooking (rapid boil) bean soup. Return to the boil, careful not to let it cook over.
Cook 10 - 15 minutes, until the dough doesn’t taste "doughy" in the center. Just a wee bit of salt & pepper is all you need. ENJOY!
I have tried bean dumplings with other kinds of beans - pintos, October beans, Great Northern (that’s the large white beans), red beans, and black beans... but nothing succeeds like good old navy beans! Shhh! If you promise not to tell anyone, I’ll tell you a secret.
Sometimes when I have a hankering for bean dumplings, and I don’t want to take the time to cook my navy beans, I’ll use Luck’s brand canned navy beans, and add 2 or 3 cans of water to the beans. Of course, the home cooked beans are better, but if you’re in a hurry, the Luck’s brand navy beans are a good substitute. This is what the Luck's can looks like.(I couldn't find a picture of the navy beans, but it is the same color can, just labeled "Navy" instead of "great Northern") .

Italian White Beans 1-1/2 tablespoons olive oil 1 cup finely chopped onion 1/8 teaspoon crushed red pepper 4 garlic cloves, minced 1 bay leaf 1 tablespoon water 1 16-ounce can Great Northern or navy beans, rinsed and drained 2 teaspoons white wine vinegar Salt and pepper to taste Purchased polenta Parmesan cheese ---- Heat oil in a large nonstick skillet over medium-high heat. Add onion and sauté 3 minutes.
Add red pepper, garlic, and bay leaf and sauté 3 minutes. Stir in water and beans. Cook 3 minutes or until thoroughly heated.
Stir in vinegar, salt, and black pepper. Discard bay leaf. I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
