I just use onions, potatoes, carrots, and celery. Scallions and parsley are added for more flavor, too. Before serving I add sauteed strips of green and red peppers (do not like them over cooked).

The peas or broccoli florets I add to the brown rice to give some color. The peppers could be added to the rice, too unless you are making buttered noodles to serve with the stew. Once I cut some fennel and added to the stew.

I have never had beef stew with rice but that sounds good. Also love your idea of scallions and turnips or squash. I think Im going to be making lots of different stews this winter.

Funny that all my life Mom served anything with sauce on rice. Let me clarify that I season the meat (preferably Angus lean chuck) well letting it marinate over night. I used to brown it first until the British chef Jamie Oliver said not to do it because changed the quality of the meat.

I use as beef seasoning garlic, creole spices, Worcestershire sauce, light soy sauce, a touch of balsamic vinegar, couple tablespoons of smokey bbq sauce and 2 dried bay leaves. I just found a recipe for a chicken stew. That's my next project.

Not too crazy about cooked tomatoes and I prefer the creole seasoning that I buy a case every year and share with family and friends. We use it on everything. Com.

Violet's ingredients sound superb! The only thing I'd also add would be some diced tomatoes and Italian seasoning... maybe even a little sprinkle of Worcestershire sauce and brown sugar.

Corn is good, and onions if you are not already counting them as seasoning. Also potatoes if you are not already counting those. Really, anything you have can work in stew...

I have always preferred frozen to canned. And thrown in just early enough to heat up. Corn gets overcooked pretty easily.

I knew someone who didn't put potatoes in their stew, but served it over mashed potatoes. It was very good that way! .

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
