Way back in time, there were parasites in pork that would trouble you if they were not heated to a high enough temperature to kill them. The resultant malady was trichinosis. Thankfully, there hasn't been a case in this country for more than thirty years.
Probably the fear of trichinosis was visited on other meats, leading to the belief that all meats should be cooked to hockey puck stage. Poultry, by the way, is generally loaded with bacteria. Our government has elected to solve the problem by cautioning consumers to cook to at least 160° instead of cleaning up the packing plants.
